One of the best muffins in town could be found in boutique cafes or patisseries, but making a homemade muffin is no doubt the best, especially when it is served hot and fresh from the oven. It is easier than you think. Here’s my recipe:
380 g Vanilla Sponge Cake Mix (ALDI)
2/3 cup milk
3 tbsp butter
Mash banana in a separate bowl. In a large bowl, combine all A ingredients. Add mashed banana.
Pre-heat oven to 200 degrees C.
Prepare cupcake molds or baking pan. Pour batter. Top with blueberries and sprinkle with almond nuts.
Bake for 40-45 minutes. Muffin is cooked when it springs back when it is lightly touched in the centre.
